Circa 1870 Buffalo Waffles

1 pound flour

2 ounces butter

1quart milk

1 gill rice

2 tablespoons baking powder

2 teaspoons salt

2 tablespoons Indian corn meal

4 eggs

Boil the rice in three gills of water (1 gill equals 4 ounces). Melt the butter in the hot rice. Sift the flour and powder together. Then in another bowl beat the eggs very light and pour in half of the milk. Add the flour mixture, the salt, and the rice. Beat thoroughly and by degrees add the other pint of milk, which should not be more than lukewarm. Pour batter into skillet. In baking be careful not to leave the room as it's rising in the iron skillet. Turn an cook other side till done.
